I love to find recipes for foods that are comforting, delicious, easy (I have a lot I want to do!) AND full of nutrients we need to stay healthy. Below are some recipes I have found and make over and over again. Click the picture to open the blog and recipe.

Healthy Oatmeal Chocolate Chip Cookies

These cookies are flour and processed sugar free, vegan, and irresistible. They have oats in them too. Don’t let the aquafaba scare you. It is the brine or liquid in a can of garbanzo beans. I now keep some in my freezer in case I want to make these cookies, but do not want open a can of beans. The Minimalist Baker is my favorite food blog!

You would never know the base of these cookies is beans. I have quizzed many after their first bite and no one guesses beans. They are super nutritious as far as cookies go and are a favorite at our house. I use peanut butter and this makes them even more delicious.

Naturally Sweetened Candied Pecans

These make salads taste like a treat! And they are great on their own too. I used butter, but I bet a vegan butter/oil would work well too. I skipped the cayenne so my son would eat them.

No Bake PB Brownie Bars

I love peanut butter and chocolate and have been on the hunt to find the best healthy combinations. These bars are my favorite of those that I have tried. They aren’t too sweet, just perfect. I cut them into small pieces so I can make them last. I like that they are stored in the freezer as well.

I know I said the bars above are my favorite, but these bars are amazing too (and my husband’s favorite). These bars are sweeter. Almost like candy. So good and such a healthy dessert.

The Best Healthy Blueberry Oatmeal Muffins

These muffins are sweet, light, and my son’s favorite of all the muffins I have made for him. Warming a muffin up and adding a little butter (or butter alternative) is heaven on a plate.

Strawberry Greek Yogurt & Oat Muffins

These are delicious and my son’s favorite muffin these days. They are made with oat flour instead of regular flour or almond flour. I like to put a pecan or two on top for crunch.

I have made these muffins too many times to count. Sometimes I add cranberries, dark chocolate chips, and nuts. They are filling and can be eaten as a meal or a snack.

Almond Flour Bread

This bread is really easy and you may already have the ingredients on hand (except for the flax meal which you could keep on hand from now on). This bread is almost like cornbread, but not dry at all. We love it with some vegan butter and paired with soup or salad.

Asian Kale Salad

This salad is extremely flavorful. I tried out a new ingredient I had never used before and loved it, chili garlic sauce. It has some heat, but the heat can be controlled by using less or more of this sauce. I doubled the garbanzo beans and the dressing to have more on hand to be enjoyed with the leftover salad ingredients.

Black Bean Sweet Potato Enchiladas

These enchiladas are so delicious, I promise you won’t miss the meat. They are great for having company over (I double the batch to ensure we still have leftovers). I omit the jalapeño usually and there is plenty of flavor from the green chilis and spices.
More Tried and True Healthy Recipes
I don’t have my own pictures of these yet, but as soon as I do, I will add them. I have made all of these recipes more than once and can vouch for their deliciousness. The blog posts where I found them do have lots of pics.
- Almond Flour Banana Muffins (ifoodreal)–I use this as a base, but often add fruit and nuts to them.
- Grapefruit, Walnut, & Feta Salad (myrecipes)–I recently tried it with canned grapefruit and grapefruit juice and it was even easier.
- Roasted Root Vegetable Salad (Naturally Ella)–Amazing in the winter.
- Simple Pumpkin Soup (Minimalist Baker)–Canned pumpkin would work too. When I am in a hurry, I skip the kale topping.
- Vegan Curried Cauliflower Soup with Lentils (Vegetarian Gastronomy)–I love that this can be made in my Instant Pot, but there are stove top directions too.
- Roasted Cauliflower Soup (PaleoLeap)–You can skip the bacon garnish if you are so inclined and use pumpkins seeds or green onions instead.
- Roasted Vegetable & Quinoa Harvest Bowl (Minimalist Baker)–This bowl is speedier to make than the one below and if you already have tahini sauce on hand, it’s even easier.
- Sweet Potato Chickpea Buddha Bowls (Minimalist Baker)–So comforting. And I had no idea it is so easy to make tahini sauce!
- Kale Quinoa Salad (allrecipes)–I sometimes change the salad ingredients depending on what we are having with the salad. The dressing is so simple and delicious!
- Triple Berry Crisp (The Lemon Bowl)–I adapt this recipe, but love the oat topping. I add maple syrup, cinnamon, tapioca or corn starch, and sometimes lemon juice to the berry mixture. Try cherries and pineapple instead of berries too!
